I can't find a breakdown of the Coppertale team anywhere can I say that Faye played last year as a reserve and made starting chaser this year?

YES, that's totally fine! I think we've been working off the assumption that Faye played Chaser last year (since our last Faye did?) but that's not really essential at all, so I'm cool with this being her first year as a starting chaser ;3;
